Rename pmu_protocol target to pmu_protocol-lib, Include FetchDependencies for crc and c_helpers, gate demo executable

  • Rename library target from "pmu_protocol" to "pmu_protocol-lib"
  • Replace manual FetchContent blocks for "crc" and "c_helpers" with the new FetchDependencies module and fetchdependencies() calls, renaming the linked targets to crc-lib and c_helpers-lib
  • Bump cmake_modules GIT_TAG to "da9010833db7c4d06328fd6fb5840c998607c4d4"
  • Add LIB_DEMO_ENABLE option (default OFF) to conditionally build the demo executable
  • Drop -Wall -Wextra -Werror compile options and the if(TARGET ...) guards from the library target
  • Remove redundant enable_language(C CXX) call and unused/commented-out lines
  • Update project.yml.in to reference libc_helpers-lib.a and libcrc-lib.a
  • Document the LIB_DEMO_ENABLE option and how to enable/disable the demo application in the README, and update the doc-generation command
  • Added "*.gitlab-ci.yml" in .gitignore
